Planning a trip to New York next May or June and trying to find a hotel for 5-7 nights that won’t put me in 2k worth of debt is driving me up the wall. I’ve accepted that the summer months will be slightly more expensive, and I’ve been looking outside of Manhattan (I ideally want to stay in Brooklyn), but the prices I’m seeing are insane. I checked New Jersey (Hoboken) just to see if there’s any difference and NOPE—still crazy expensive.
If anyone has any recommendations for chain and independent hotels or places to rent (not Airbnb), please share. Willing to stay in other parts of the city if needed.
Look at the independent Asian hotels in Flushing. There are several safe picks within a ten-minute walk of the 7 line terminus. Also check lower-end properties in Long Island City, Queensboro Plaza, etc.
In Manhattan, Pod 51 in Midtown can often be had for < $100 / night.
You don’t say what your budget is, just that you see standard NYC rates as crazy, nor whether you’re coming for weekdays or a weekend, so it’s hard to give pinpoint recommendations.

I stayed at the Pod51. Rooms are super small but clean and quiet.
Me too, but my experience was before the pandemic. It was fine, and definitely inexpensive, but the rooms are more like cramped inside cabins on a European ferry, and you had to wait for the light above your door to turn green in order to go take a shower.

Pod on 42nd st is really cool. It was its own little experience. I stayed there once before I moved here and it was fun. Walking distance to the theatres, saw a few shows, good stuff.

What are the names of these independent Asian hotels?
Google “Asian hotels Flushing” and see what happens. One is the Asiatic. There’s about eight in the side streets clustered around Roosevelt and Main Street though.
Come at this from a different way. Personally, I’d look at opening a points card with a chain hotel (Hilton or Hyatt or IHG) and acquire as many points as you can over the next several months and use those points to lessen your out-of-pocket cost.
NYC is expensive. No way around it. Brooklyn is just as trendy. You’d have to get up in Yonkers to make any real difference in price during the months you’re looking.

I have a Saturday in January booked in Chelsea for $208 including tax, another Saturday in January at a better hotel at Central Park South booked for $250, and a Saturday in May in Chelsea booked for $343.
Manhattan is a bit cheaper in January. It’s more expensive in May.
Just looked flexible dates in Marriott app, less than $1300 for 5 nights at Fairfield NY 5th Ave (21 West 37th St) with free breakfast May 27-June 1.
BUT if you need to ‘go into debt’ for this, maybe a cheaper destination should be looked at.

We’ve stayed here a bunch of times, most recently a couple of weeks ago. It’s a good, decent hotel with free breakfast and not too far from the subway.
