Where are you looking to go? How far are you willing to travel? What’s your budget like?
Costa Rica is great and offers plenty of hiking. South America could be an option too with many fantastic hiking spots like Patagonia. New Zealand also has amazing trails. South Africa has some beautiful hiking as well. If you’re up for it, climbing Kilimanjaro is unforgettable.
Costa Rica is perfect. You’re both going to love it.
Consider the island of Kauai in Hawaii, especially the Na Pali coast trail.

I went to Kauai last February, and it was fantastic.
How about Belize? The beaches are on the Caribbean side, unlike Costa Rica, which is more jungle on the east.
You can explore Mayan ruins, jungles, and even the barrier reef.
The local cultures like Creole and Mestizo are fascinating and the people are very welcoming.
Street food is delicious and safe to eat.

I second Belize! I visited in February, and it was warm. The jungles provided a lot of adventures!
You can also relax on Caye Caulker or San Pedro and enjoy some beach time.
I suggest splitting your trip between outdoor activities and beach relaxation. It can be tricky to return to the mainland after your island stay, so plan accordingly.
